1 cup fresh parsley
1/2 cup olive oil
1/4 cup red wine vinegar
1/2 cup fresh cilantro
2 large cloves garlic
1 tsp dried red pepper flakes
1/2 tsp ground cumin
1/2 tsp salt
6oz steak per person, seasoned well with salt and pepper on both sides.
Place all ingredients (except the steak!) in a food processor and blend till mostly smooth. Decant into a bowl for serving. You can make this a couple of hours in advance and refrigerate, if you wish.
Grill the steak on a griddle or barbecue for about 7 minutes each side or until internal temperature is about 120F for medium-rare (the steak in the picture was removed from the heat at 120F, but remember it keeps cooking afterwards - adjust your time/temp according to your own preference). Leave to rest for 5-10 mins under loose foil. Slice across the grain on the bias and serve with the sauce.
