4 salmon fillets (6oz each)
3 cloves garlic, minced
1 tbsp white wine
1 tbsp honey
1/4 cup balsamic vinegar
3 tsps Dijon mustard
Salt and pepper to taste
1 tbsp chopped fresh oregano or fresh thyme (shown here)
Pre-heat oven to 400F
Coat a small saucepan with non-stick cooking spray or small amount of olive oil. Over medium heat, cook and stir garlic until soft, about 3 minutes. Add in white wine, honey, balsamic vinegar, mustard, salt and pepper. Simmer uncovered until slightly thickened, about 3 minutes.
Line a baking sheet with aluminium foil and brush with a little oil. Arrange salmon fillets on the sheet and brush with balsamic glaze. Sprinkle with thyme or oregano.
Bake fillets in pre-heated oven for 12 minutes. Brush with remaining glaze and season with salt and pepper. Use a spatula to transfer fillets to plates, leaving the skin behind on the foil.
