1/4lb smoked salmon
5 eggs
1 Floz milk
Salt and freshly ground black pepper to taste
2oz goat cheese, crumbled
1 bunch of chives, chopped
1 tbsp olive oil
Pre-heat oven to 350F.
If using hot-smoked salmon, skin the fish and break it bite-size pieces. If regular (cold-smoked) salmon, then simply chop slices into bite-sized pieces.. In a bowl whisk eggs, milk, salt and pepper as if making an omelette. Stir in salmon, goat cheese and chives.
Heat olive oil in a large frying pan and add egg mix. Cook for 1 min and then transfer to oven. Cook for 25-30 mins so that frittata is fluffy and set in the middle. Allow to stand in the pan for 5 mins before serving.
Serves 2 for supper and 4 as a starter
