Double all ingredients for a Crown Roast
1 rack of lamb
4 slices baguette, chopped fairly fine in a food processor
2 tbsp olive oil
3 tbsp chopped herbs (such as rosemary, thyme, parsley, oregano)
2 cloves garlic, crushed
Salt and freshly ground black pepper

Pre-heat oven to 400F.

In a bowl, mix the breadcrumbs, olive oil, herbs, garlic, salt and pepper. Keep turning until olive oil is evenly absorbed. Lay the rack of lamb on a lightly-oiled baking tray. Pat the crumb mixture firmly and thickly onto the fat side.

Roast rack for 30 mins. If necessary, cover crumbs with tin foil towards end of cooking to avoid burning. Remove from oven and let rest for 5 mins.

Halve the rack and serve with vegetables.

Serves 2 (or 4 if doing the Crown)
