4 Baby beetroots cut into quarters
2 tbsp balsamic vinegar
Generous lug of olive oil
Salt
Pepper

Set the oven to 360F.

Coat the beetroot in the olive oil, balsamic vinegar and season with salt and pepper. Roast in a tin covered with foil for 45 mins turning occasionally.
