1lb minced beef (the leanest you can find)
1/2 medium onion, finely chopped
1 tbsp thyme leaves (or rosemary if you prefer)
1 serrano chilli or red chilli, seeded and finely chopped
Salt and pepper to taste
1 egg, beaten
2oz blue cheese, cut into 4 dice-sized chunks

Mix all ingredients except the cheese in a large bowl. Knead well with your hands until you have a single large pattie. Split into four and mould in your hands to a large flattened ball. Make an indent with your thumb and insert a chunk of cheese. Cover over with beef mix and re-mould to a flattened ball. Repeat to use all of the mix.

Grill for 7 mins each side. I serve with mixed salad and garlic bread.
