For the glaze:
1/2 cup soy sauce
1oz light brown sugar
2 tbsp hoisin sauce
2in fresh ginger, peeled and grated
Juice of 1 lime
For the salmon:
4 salmon fillets, each about 6oz
2 bunches broccolini, trimmed
2 tsp sesame seeds, dry-roasted in a skillet till lightly browned
2 green onions (scallions), white and green portions thinly sliced
Pre-heat oven to 400F.
To make the glaze, in a large skillet over medium heat, combine the soy sauce, sugar, hoisin sauce, ginger and lime juice. Cook stirring till sugar is dissolved and mixture is reduced by half, 2 mins. Transfer glaze to a small bowl.
Place the salmon, skin side down, in the pan and brush liberally with the glaze. Arrange the broccolini around the salmon and bake for 10-12 mins, until salmon is just flaky. Garnish with sesame seed and green onions and serve over steamed or cauliflower (LOW CARB) rice.
Serves 4, but glaze will easily stretch to 6 fillets
