6 tbsp (5oz) pomegranate seeds
1lb frozen lima beans
5oz crumbled feta cheese
4 tbsp olive oil
2 tbsp chopped fresh parsley
zest of 1 lemon
Salt to taste
Blanch the lima beans in boiling water for 1 minute. Drain and place in a bowl of iced water. Remove the opaque skin from the beans.
Place "de-skinned" beans in a bowl and add all remaining ingredients. Stir to mix and serve.
Serves 6 as a starter or side.
