1 bunch of broccoli Rabe
2 tbsp olive oil
3/4lb sausages (hot or sweet Italian), sliced into bite size chunks
4 cloves of garlic, sliced thinly
2 tsp crushed red pepper flakes
1lb orecchiette or red lentil rotini for LOW CARB
Grated Parmesan cheese to serve
Cook pasta according to instructions on packet till al dente. Drain and set aside.
Bring a large pan of water to the boil and cook broccoli rabe for 3-4 mins till tender. Drain and set aside.
In a large skillet, heat olive oil over medium-high heat. Fry sausage chunks till cooked through and browned, about 4 mins turning occasionally. Add garlic and red pepper flakes. Cook for a further 1-2 mins till fragrant.
Add broccoli rabe and pasta to skillet and cook for a further 2 mins turning frequently to coat evenly. Add olive oil if necessary. Serve with plenty of Parmesan cheese on top.
