1lb frozen Lima beans or 3lb fresh Fava beans, blanched and peeled
2 tbsp olive oil
3 cloves garlic
1 handful fresh mint
Zest and juice of 1 lemon
Salt and freshly ground black pepper to taste
1lb peeled, deveined shrimp (I allow for 5-7 each, dependent on size)
1 tsp red pepper flakes
In a food processor blend the peeled, blanched beans, olive oil, garlic, mint lemon juice, salt and pepper. Add a bit of water if need to loosen the puree if too solid.
Toss the shrimp with the lemon zest, red pepper flakes and salt. Saute in a little olive oil till pink and cooked through.
Serve shrimp on the puree with some French bread.
