20 Brussels sprouts (sliced in half lengthwise)
4 Floz Chicken stock
Few sprigs of thyme
Generous lug of olive oil
Salt and pepper to taste
Handful chopped chestnuts (optional)
4 bacon rashers made into fried bacon bits (optional)
Heat the olive oil in a saucepan and saute the sprouts until nicely browned (3-4 mins). Season with salt and pepper, add the thyme and stock. Bring to a boil and cook for 5 mins.
Chestnuts can be added during the last 1-2 mins of cooking.
If adding bacon, chop into small pieces and fry till crispy. Set aside wrapped in kitchen towel. Drain off most of the fat leaving 1-2 tbsp and use instead of the olive oil to saute the sprouts. Add bacon bits just before serving.
