4 tbsp olive oil
3 garlic cloves, chopped
3 tsp fresh thyme leaves
1 onion thinly sliced
4 plum tomatoes sliced (1/8" thick)
2 medium zucchini sliced (1/8" thick)
2 medium summer squashes sliced (1/8" thick)
Salt and pepper to taste
Warm 1 tbsp of the olive oil in a saute pan. Add the garlic and thyme and cook for 1 min. Transfer to a bowl and set aside. Add another 1 tbsp of olive oil to the pan and saute the onion until tender and lightly browned, 12-15 mins. Spread over the bottom of your gratin dish and season with salt and pepper.
Add the zucchini and squash slices to the bowl with the garlic and thyme together with 2 tbsp of olive oil. Season with salt and pepper and toss to coat. Season tomato slices with salt and pepper.
Arrange the vegetable slices alternating zucchini, squash and tomato in overlapping form on the bottom of the gratin dish. Complete a ring round the edge and then an inner ring and again until all vegetable slices are used. Extend to a second layer if needed and so on.
Bake in the oven for 45 mins at 400F. Let rest 5 mins before serving.
