Olive oil to grease baking dish
4oz butter
2 shallots, chopped
1/2lb button mushrooms, sliced
1/3 cup flour
3 cups chicken broth
1 tsp salt
Freshly ground black pepper to taste
1lb cooked turkey
1/2lb dried red lentil rotini (cooked according to package instructions) - or replace with mix of broccoli/cauliflower florets
1 cup grated Parmigiano Reggiano cheese
2 green onions, white and light green portions, chopped
1 cup fresh breadcrumbs
Oil a large baking dish and pre-heat oven to 450F.
In a large frying pan, melt 2oz of butter. Saute the mushrooms and shallots for 5 mins until they begin to brown. Transfer to a bowl.
In the same pan, melt the remaining butter. Add the flour and cook stirring continuously for 2 mins. Add the chicken broth, stirring till the sauce thickens. Add salt and pepper. Add the turkey, cooked pasta, 1/2 cup of cheese, green onions, cooked shallots and mushrooms. Stir to combine then transfer to the baking dish.
In a bowl, mix the breadcrumbs and 1/2 cup cheese. Sprinkle evenly over the turkey mixture. Bake for 15 mins till bread crumbs are golden brown. Serve immediately.
