Why Bold Simple Cooking?
Most cooking sites act as a portal and offer up hundreds of pages of recipes, some good many not. I have had the good fortune to have some time off over the past two years and I have been able to sample many new dishes. As I keep saying to my wife, Ann, triage (finding the right recipe) is key to success when cooking with limited time availability. That triage is what I have done here!
My goal is to show that there are many recipes that are simple, tasty and (for the most part!) healthy. I have included recipes which are truly easy to make midweek when time is at a premium, but which can so easily double-up as really awesome dishes for special occasions and dinner parties.
I have updated with LOW CARB suggestions as I find them healthier and also alternatives to potato, rice and egg pasta have more flavor (e.g. cauliflower florets, carrot/parsnip or cauliflower/ parsnip puree and red lentil pasta rather than regular, egg pasta).
I will never add too many recipes as that would defeat part of my objective to make selection relatively easy - sometimes too many options are a bad thing!
I don't use "cheats"...by which I mean I don't use jars of processed product or some other form of ready-made content as a substitute for making it myself - with perhaps one minor exception for roasted pork chops where I do confess to using packet stuffing mix as a base! I always use fresh herbs and spices to give full, fresh flavors.
I like "big and bold" for the most part with the exception of fish dishes, where showcasing the delicacy of the flavor is important.
